Tasty Donuts with chocolate filling.

Ingredients:

 

For the dough:

 

2 ½ cups all-purpose flour

¼ cup granulated sugar

2 ¼ teaspoons instant yeast

½ teaspoon salt

½ cup milk

¼ cup water

2 tablespoons unsalted butter, melted

2 large eggs

For the chocolate filling:

 

½ cup semi-sweet chocolate chips

3 tablespoons heavy cream

2 tablespoons unsalted butter

For frying and coating:

 

Vegetable oil, for frying

½ cup granulated sugar, for coating

Instructions:

 

In a mixing bowl, combine the flour, sugar, yeast, and salt.

 

In a separate microwave-safe bowl, heat the milk and water until warm (about 110°F or 43°C). Add the melted butter and eggs to the warm milk mixture and whisk together.

 

Pour the milk mixture into the dry ingredients and mix until a dough forms. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.

 

Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.

 

While the dough is rising, prepare the chocolate filling. In a small saucepan, combine the chocolate chips, heavy cream, and butter. Heat over low heat, stirring constantly, until the mixture is smooth and well combined. Remove from heat and let it cool.

 

Once the dough has risen, punch it down to release the air. Roll out the dough on a lightly floured surface to about ¼ inch thickness. Using a round cookie cutter or a glass, cut out circles from the dough.

 

Place a teaspoon of the chocolate filling in the center of each dough circle. Fold the dough over the filling and pinch the edges to seal it. Make sure there are no openings for the filling to leak out during frying.

 

Place the filled donuts on a baking sheet lined with parchment paper. Cover them with a kitchen towel and let them rise for another 30 minutes.

 

Heat vegetable oil in a deep fryer or a large pot to about 350°F (175°C). Carefully place a few donuts into the hot oil and fry them for about 2-3 minutes per side, until golden brown. Remove the fried donuts using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

 

While the donuts are still warm, roll them in granulated sugar until coated evenly.

 

Repeat the frying and coating process with the remaining donuts.

 

Let the donuts cool slightly before serving. They are best enjoyed fresh.
